Executive Chef Sonny Partodikromo of Surinam, and Aruban Restaurant Manager Lino van der Biezen are like two peas in a pod. They have been working together for many years and are the old school. “But with a modern mind,” Partodikromo says. “My basis for cooking is `granny’s style’ in the sense that I make everything from scratch. No cans allowed, fresh and homemade is the motto.” His menu offers flavors of the world with influences of China, Indonesia mixed with the Caribbean and Europe. “Fusion as you may say and extra special is the fact that we have a charcoal grill. Also we use as much ingredients from local suppliers as possible.” The Mignon n’ Mariscos, a petite tenderloin and shrimp, Seafood Paella and New Zealand Lamb Chops are among favorites, says the Chef. “And do not forget the homemade Crème Brulee, prepared every afternoon to go fresh to the table,” Van der Biezen adds. The duo agrees on the secret recipe for Las Ramblas’ success: the location, the live guitarist Ernesto Ferro, the charcoal grilled delicacies and the personal attention from the staff. “We cook, serve and play with love and passion and that you can feel, taste, see and hear.”
Long-time experience
Van der Biezen has been working in this field for over 39 years on different locations like the Holiday Inn, Wyndham hotel and Bucuti hotel. “I started at the bottom as a busboy and climbed my way up from waiter, captain, supervisor, head waiter to restaurant manager.” Over a year ago, Lino van der Biezen joined La Cabana’s Team. “I consider myself an operations manager, more flow, more engagement, and more service. I believe in personal contact, especially with the guests.”Chef Partodikrome is one friendly face but do not get mistaken: he is keen on every detail and ambitious to move forward. “I want to improve myself every day. For 30 years I have experience in several locations including restaurant Valentino which used to be the best Italian in the Caribbean, awarded in 1997. Here at Las Ramblas I can say: it all fits.”
Making connection
Las Ramblas understands very well that standing out is important on an island where there are many restaurants. Their concept is therefore carried out to the details, surprising you from the moment you walk the stairs until you end of the night under the stars. The music is high-quality as Ferro is not your average guitarist, he built his name. The seats are very comfortable and the illuminated menu is real thoughtful, the table is dressed up with colored, glass candle holders that match the mosaic entrance columns and the plants only add to the ambiance. It’s all about the attention to details.. “We have many repeaters here who come here for 30, 40 years. Without them we cannot survive and we make clear that we have them that high in appreciation. I never saw Aruba like I did the past months, an empty parking lot, no guests and a killing silence. Those months make you realize and appreciate what makes you move. The passion for the job isn’t happening without guests. We need that connection,” Van der Biezen says.
